Well I could not have timed this any better! Here you have the last of the Fall SkinnyTinis, the Carrot Cake! And let me tell you, it really tastes like cake! I suggest making your own carrot juice. Just toss it in the juicer with some apple. It’s so sweet and and it’s so fresh — it almost tastes like a health drink — but then with Vodka! What could be better?
CARROT CAKE SKINNYTINI
- 4 oz Vanilla Vodka
- 2 oz Organic Carrot Juice
- 4 oz Diet Ginger Ale
- Cinnamon and Nutmeg to taste
Calories: This recipe will make two 5 oz martinis with 134 calories each.
Optional Garnish: Cinnamon Sugar rim 10 calories
Directions: Dip the edge of a clean martini glass in water and roll in a cinnamon-sugar mixture to rim the entire glass. Add vodka, carrot juice and a dash of cinnamon and nutmeg (if desired) to a cocktail shaker filled with ice and shake vigorously for at least 10 seconds. Strain into the prepared martini glass, and top with diet ginger ale.
Skinny TidBit: Carrot juice, because of its many healthful benefits, is frequently called a “miracle juice” as it is a goldmine of nutrients. It is high in Vitamin A and B vitamins and also mineral rich. Health enthusiasts juice it all the time to improve vitality – so why not shake it in a TINI? Mixed with vanilla vodka and thinned with the sweetness of the ginger ale, this SkinnyTini really does take like a divine piece of cake – yet has only 134 calories compared to 300+ in traditional carrot cake.
Winter/Holiday SkinnyTinis are on the way!
Tonight I have a small party to test out the holiday line! There is a lot on the menu, so I’m expecting at least 3 fantastic, original SkinnyTinis to release to you this December! I am looking to test Peppermint Mocha, Red Velvet, Gingerbread Cookie, Gingerbread Latte, Salted Caramel, and Eggnog. Wish us luck!
